One-pan butter bean recipe, Two ways
This butter bean recipe is one of my favourite kitchen staples, and not just because it’s an easy shortcut to dinner and minimal washing up. Butter beans are packed with fibre and plant protein, which means they help keep blood sugar steady rather than sending it on a rollercoaster – so no crash an hour after eating, no sudden 4pm slump. Fibre feeds your gut bacteria, which matters far more than most people realise: a well-fed gut microbiome plays a genuine role in mood, energy and even hormone balance, and most of us aren’t getting enough.
This is the kind of meal I want in regular rotation for exactly that reason – real nutrition, minimal effort, maximum comfort. One base, two directions depending on the night you’re having.
Why this one-pan butter bean recipe supports your gut

The base
- 1 tbsp olive oil
- 1 onion, sliced
- 2 garlic cloves, crushed
- 400g tin chopped tomatoes
- 700g tin butter beans, drained and rinsed
Heat the oil in a large, deep frying pan over a medium heat. Add the onion and cook for 5 minutes until soft, then stir in the garlic and cook for 1 minute more. Pour in the tomatoes and butter beans, bring to a gentle simmer, and cook for 10 minutes until slightly thickened. From here, take your pick:
Option 1 – Harissa & egg
Stir in 1 tsp ground cumin and 2 tbsp harissa paste along with the garlic. Once the base has simmered, make two wells in the mixture, crack in an egg for each person, cover, and cook for 5-6 minutes until the whites are set. Scatter over fresh coriander and crumbled feta.
Serve it with: A simple rocket salad dressed with lemon and olive oil to cut through the spice. If you need more carbs, add some flatbreads.
Option 2 – French chicken
Before you start the base, brown 4 chicken thighs in the pan for 3-4 minutes each side, then set aside. Cook the onion and garlic as above with a sprig of fresh thyme and a bay leaf, then return the chicken to the pan with the tomatoes, beans and a splash of stock. Cover and simmer for 15 minutes until the chicken is cooked through. Stir in a handful of olives, warm through, and finish with fresh parsley.
Serve it with: A side of steamed green beans or a simple green salad.
